Preparing and Storing Food

Especially with smaller igs who do not eat much yet, preparing and storing food to keep it fresh as long as possible is an important issue. Too often, greens go bad quickly and veggies become mushy or moldy. Below are some tips to help keep your food fresh longer!

  • Wash and completely dry greens before preparing.
  • When reducing greens to smaller pieces, tear them by hand instead of using a knife or scissors. They will not rot as fast! Using a plastic knife instead of a metal one will also help.
  • Store greens in a rubbermaid box with a paper towel in the bottom, or fill plastic baggies with the greens. Make sure you get as much air out as possible.
  • Purchase in smaller amounts - most greens are sold by the pound in stores. There's nothing that says you have to buy the whole bunch, just take what you need.
  • Use a food processor or hand grater to get hard veggies like squash and yams into easy to digest pieces.
